Our Recipes

Every week in our newsletter, we share a “recipe” either from the Cress Menu, a Cooking Class, or just something that we hope you will enjoy, try, and most importantly, make your own. Sometimes, the recipe will be without measurements, rather only ingredients. Sometimes, we will try to include suggested amounts to accomplish the desired flavour profile. But we must be clear that those measurements aren't meant to be taken too seriously (except in the case of vinaigrettes, classical sauces, or desserts). Please feel free to drop us a line as we will enjoy reading your feedback should you decide to try them, so please do not hesitate to let me know. VEGETABLE AND BLACK BEAN BURGERS
INGREDIENTS

1 large red onion, small diced
2 medium carrots, peeled, small dice
1 large yellow squash, small dice
1 large zucchini, small dice
2 tbs fresh garlic, minced
16 oz cooked black beans
1 cup cooked farro or barley
1 cup cooked wild or brown rice
2 poblano peppers, small dice
2 tbs fresh flatleaf parsley, chopped
2 tbs fresh cilantro, chopped
1 tbs fresh garlic, minced
1 tsp cumin powder
1 tsp coriander powder
1 tsp smoked paprika
1 tbs Old Bay
Kosher salt, to taste
Black pepper, to taste
Italian bread crumbs, as needed
Extra virgin olive oil, as needed

PROCEDURE

In a heavy bottomed pan on medium heat, sauté the onions, carrots, squash, and poblano peppers in the olive oil, until softened. Season with some salt and pepper to bring out the flavours. Add the garlic and saute for 30 seconds. Add the remaining ingredients except the bread crumbs and the fresh herbs. Stir to coat evenly. Add all the spices and stir to coat evenly. Taste and re-season, if necessary. Cook on low heat, stirring periodically until the mixture is fairly dry. Transfer to a bowl and let it cool. Add the fresh herbs and enough bread crumbs to be able to form 3/4 in thick patties. To finish, saute the patties in extra virgin olive oil on low-medium heat until golden brown on both sides. Top with your favourite cheese if preferred and finish in a pre-heated 350 F oven for about 10-15 minutes until the cheese has melted and the burgers have warmed through.

CONDIMENTS:

Chipotle Mayonnaise: A good quality store bought mayonnaise, chipotle peppers, chopped, cilantro, salt and pepper to taste
Cilantro and Garlic "Crèma": fresh lemon juice, minced garlic, Mexican crèma or sour cream, chopped cilantro
Fresh Ripe Avocado: sliced into large, but thin slices.
