Our Recipes

Every week in our newsletter, we share a “recipe” either from the Cress Menu, a Cooking Class, or just something that we hope you will enjoy, try, and most importantly, make your own. Sometimes, the recipe will be without measurements, rather only ingredients. Sometimes, we will try to include suggested amounts to accomplish the desired flavour profile. But we must be clear that those measurements aren't meant to be taken too seriously (except in the case of vinaigrettes, classical sauces, or desserts). A TRIBUTE TO MR. JACK CARNEY: LAGAVULIN SCOTCH WHISKEY INFUSED BANANA-PECAN CROISSANT PUDDING
INGREDIENTS

1 cup Lagavulin single malt scotch whiskey
8 each, large butter croissants, torn into 1 inch pieces
3 whole eggs
1/2 cup white granulated sugar
3/4 cup light brown sugar
pinch of kosher salt
1 T orange zest
1 t vanilla extract
3 cups heavy cream
6 ripe bananas, sliced
1.5 cups chopped toasted pecans

PROCEDURE

Pre-heat an oven to 325 F. Bring the heavy cream, scotch, vanilla, and orange zest to a low scald. Cream the sugars and eggs in a large bowl until pale yellow (3 minutes or so). Mix in the salt. Temper the eggs with the hot cream in stages so as to not coagulate the mixture. Add the bananas and pecans, mixing thoroughly with a heat-resistant spatula. Taste the mixture for balance. Add more scotch, if desired! Add the croissants to the bowl and stir gently but thoroughly so that the croissants are "submerged" in the liquid. Let the bowl sit at room temperature for at least 45 minutes, stirring occasionally. If needed add some more flavoured liquid so that the croissants are thoroughly soaked.

Pour the batter in a baking dish and bake uncovered for about an hour until the pudding is slightly firm in the middle. Let cool slightly and serve with some high-quality vanilla bean ice-cream and a shot of Lagavulin on the side.
